Pasta Dough

This is a basic pasta dough recipe that I use for everything.  It works for cut pastas, filled pastas, any pasta really. Now, I always use my Kitchen Aid Mixer to make my pasta.  The trick is not to over work the dough. Kitchen Aid also makes pasta rollers that makes this process of pasta making so simple.  Rather then the hand crank machines which work well and are great if you are looking for an arm workout.  The one thing that I need to warn you about is that once you start making your own pasta, you will have a hard time buying the boxed stuff at the store.

Pasta Recipe

2  Each Whole Eggs
5  Each Egg Yolks
25 grams olive oil
75 grams Durum Flour
225 grams All Purpose  Flour
10  grams Salt

 

Procedure

Whisk together the eggs, egg yolks and oil. Put the AP and Durum Flours into the bowl of your kitchen aid mixer.  Start the mixer on the lowest setting. Add in your salt.  Now there should be a slight well in the flour.  Add half of the egg mixture to the flour while continuing to mix.  When the egg is incorporated,  add the rest of the egg and mix for about 4 minutes. If the dough is not coming together, add water about 1 tablespoon at a time.  Once the dough has been worked let it rest for atleast 1 hour before rolling it out.
