A Quick and Easy Summer Dessert

Normally I would never tell you to go out to a store and buy something premade but I have been working alot recently and don’t really feel like cooking.  So here is your pass to go to a store and buy premade.  A quick and easy dessert to serve during the Summer. Those premade dessert shells they sell in the fruit area of your grocery store are perfect for this dessert.  They are sold in packs of six so this recipe will make six. I like to use Strawberries and Blueberries because they hold together the best but you can use any berries. Definitely use strawberries because they give off this great juice while Macerating.

Macerated Berries

1 package of Dessert shells 
2 quarts strawberries, sliced
1/2 pint of blueberries
3 Tbls. sugar
1/2 cup tawny port

Just Mix all of the ingredients together, except the Dessert shells, and let sit on the counter for at least 20 minutes.  You can not make this the day before because the berries will become mush. Serve over the dessert shell and garnish with a dollop of whipped cream.

Whipped Cream

 1/2 cup of Heavy Cream
1 teaspoon of Vanilla Extract
2 Tablespoon of Powder Sugar

In a large bowl, whip cream until stiff peaks are just about to form. Beat in vanilla and sugar until peaks form. Make sure not to over-beat, cream will then become lumpy and butter-like.
