This is a basic beer Batter Recipe. Great for soft crabs or you can use it for vegetables or anything you want to batter and fry. For the Crabs, I just pan fry them. Be very careful because the crabs tend to splatter quite a bit.
325 grams all purpose flour
7 grams raw Polenta or Corn Meal
40 grams cornstarch
16 ounces good quality beer
10 ounces soda water
Procedure:
1. Add all the dry ingredients together in a bowl.
2. Slowly whisk in the beer and then add the soda water as needed so it is like a very thin pancake batter.
3. Salt and Pepper to taste.
