Truffled Popcorn

Makes about 10 cups.

IMG_3308 Fellow Gladiators Laurie Forster and Melanie Hastings of Let’s Talk LIve know how to drink like Olivia Pope on ABC’s hit show Scandal!

Ingredients:

2 tablespoons truffle butter (or regular salted butter)
1 tablespoon truffle oil (white)
1/2 cup popcorn kernels
2 tablespoons coconut oil
2-3 tablespoons chopped chives
kosher salt

Directions:

Melt the truffle butter in a small ramekin in the microwave (about 30 seconds), add truffle oil and set aside.

Place a 3 quart saucepan over medium high heat. Add 2 tablespoons coconut oil and popcorn kernels to the pan. Close the lid and shake pot back and forth, on the stove and pop the popcorn until you start to hear the popping slow down.

Remove from the stove.  Put half the popcorn in a large zip lock bag or brown paper Bag. Drizzle half the truffle butter/oil mixture, salt and chives into the bag and shake thoroughly to coat the popcorn. Add the second half of popcorn and the rest of the  truffle butter/oil mixture to the bag and repeat.

Add red wine and tune into Scandal Thursdays at 9PM ET on ABC!
